A wonderful byproduct from the oldest sake brewer in the Niigata Prefecture. Kisaichi Jozo uses the sake lees to begin the fermentation of this red vinegar, which is then aged for three years. Traditionally used as a component to sushi rice preparations, this vinegar has a flavor similar to marsala or a mild sherry vinegar. 200mL.
