Sushi Vinegar

The ingredients are simple: Iio Jozo Pure Rice Vinegar (aged two years), brown sugar, honey and sea salt. Iio-san starts with the vinegar we already know and love – his Pure Rice Vinegar. The brown sugar comes from Tanegashima, an island in Kagoshima prefecture. This island produces a sugar with a mellow flavor that is neither too sweet nor too minerally, kind of the Goldilocks of sugar. Iio-san then adds wonderful Argentinian wildflower honey. Lastly, they add a touch of Australian sea salt that has been processed in Hyogo prefecture.
