Fans of the old school French & German style boning knives, rejoice! A full tang, 159mm edge of W2 high carbon steel (298mm overall), with a reactive rigidity from base of handle all the way up to the last 25mm at the tip, where it becomes slightly flexible. What this amounts to is a guided precision in general handling, with a bit of allowable bendy maneuvering when getting into joints/ cartilage and along the muscle membranes. Handle scales are bocote with a gold-webbed onyx inlay and brass ferrule. Handcrafted in Richmond, VA.
