An excellently crafted knife for general purpose animal breakdown. This 115mm stunner is a cross between a Western style butcher's knife and a Japanese hankotsu, making it well-suited for a variety of different hand grasps an most certainly adept at tackling all major proteins- poultry included- within a whole-animal approach (primal, sub-primal and secondary cuts alike). The edge steel is forged 52100 high carbon with a soft steel ferrule and the octagonal wa handle is reclaimed teak from a Japanese schooner. It also comes with a leather sheath that was crafted by Will Griffin himself! This one checks all the boxes for the meat enthusiast! Handcrafted in Brooklyn, NY.
