An umami-rich sauce with a tropical elevation from Philly's own "we make sauces now" Poi Dog. A little bit sweet and a lotta bit savory allow the sauce to transform effortlessly from condiment to component (katsu sando- duh!, marinade, addition to braises, dippin' sauce, etc.), and it also happens to be vegan.
