Pure Rice Vinegar


Producing the finest vinegars in Japan for over 120 years, and controlling the process from beginning to end, Iio Jozo uses 200g of rice to produce one litre of vinegar- five times the minimum requirement by law. First they start the fermentation process with their natural spring water, in-house sake.
