The Janey (inspired by another incredibly talented baking/ pastry friend), is the gluten enthusiast's go-to. Forged 52100 high carbon steel in an offset profile to assist in board clearance and leverage, with super sharp, wide, shallow serrations make this a total all-rounder for soft & light as well as crusty & dense breads. 231mm tip to heel, full tang, fit up real classy like with cambia ash wood featuring brass and black scale liners and brass pins.
