Most knives in this category come from the personal collection of a local Richmond gourmand; they have been gently loved and well-cared for with no damage or misuse prior to our acquisition. 

Though we have thoroughly evaluated, inspected, cleaned and conditioned each knife, there will be obvious signs of use: patina on high carbon, minor marks from previous sharpening, deeper handle saturation, etc. 

Each has a very well maintained and established cutting edge, however if you wish to have us get it super duper sharp prior to shipping or store-pickup, please select that option in the dropdown menu as you add to your cart (please note that electing sharpening service will add some time to when your knife is ready to be shipped out or picked up. Typically this is between a 3-5 day lead time, depending on scheduling).
